Mini Uttapams

I feel most of the south indian dishes like Dosas, idlis, appams, uttapams etc can be called all rounders, i.e We can have them as breakfast, as brunch, as lunch, dinner, snacks and in whatever other possible way we want. They can be relished any time of the day . Secondly they are totally oil free (if done in non stick) and very tasty and delicious. I can go on praising them endlessly.................
Today I m posting the recipe of mini uttapams which are tasty as well as cute looking.....





Ingredients :

Rice - 2 cups
Urad dal - 1 cup
finely chopped onions - as required
finely chopped coriander leaves - as required
finely chopped chillies - 3 to 4
Salt
Oil to smear the pan




Method :

Soak rice and urad dal separately for 4 to 6 hours in water.
Grind them separately.
Mix them and let the mixture ferment for at least 6 to 8 hours.
Mix onions , coriander leaves and chillies and keep aside.
Smear the pan with oil and put the mixture.
Spread it in a thick round form .
Sprinkle the onion mixture on top.
When the bottom side is cooked turn them and cook the other side till the onion are pink .
Serve them with Coriander chutney and sambhar.
